Green Beans Almondine

Wash and snap 3 lbs of green beans. Steam in pressure cooker, cooking immediately when the bell begins to rock.

Saute 1/2 cup slivered almonds in 4 Tbs butter until golden brown.

Toss beans with toasted almonds.

Cheese Grits

1 cup uncooked grits
1/2 cup butter (1 stick)
1/2 lb grated sharp cheddar cheese
1/4 cup milk
2 eggs, well-beaten

Cook grits as directed. Melt butter and cheese. Combine beaten eggs and milk. Add all ingredients to grits. Pour into buttered 2 1/2 quart casserole. Bake at 425 for 45 mins. Serves 6-8
