Summer Dinners
There are six around the dinnertable now. When I had only two children, I still cooked for 6-8 and invited the neighbors over. I suppose in larger families there is no such thing as leftovers. But I rely on leftovers. I plan for them and market them :)
The collegians have been home for almost a week and we're trying to settle into a routine. I'm thinking out loud about meal prep, grocery shopping, laundry days, and general housekeeping. Transportation is a big issue because we have six drivers and three vehicles.
But back to the issue at hand....food. We love to grill and eat cold salads when the weather is hot. There's no time like the present to give everyone a chance to be chef for the day.
What's your favorite summer meal?
Love the grill. One of my favorite meals for visiting company (especially when I don't know their preferences) is Make Your Own Taco Salad, or what we call Pile Ons. You put everything out and let folks build their own salad:

Chopped lettuce

Refried beans
Olives
Grated cheese
Salsa

I don't have a particular type of favorite summer meal, but I do look forward to experimenting this summer with lots of different salad recipes. I plan to make them with our two eldest daughters (ages 9 and 7) so they can learn that "salads" are much more than just iceberg lettuce with cheese, carrots and tomatoes!

ReplyDeleteOff to investigate a BBQ joint for a family reunion; and prepare for Sunday dinner after church, I bringing to share: fried chicken, spinach salad, and steamed carrots.
